Crêpes à l’Amande

  • 2 cups SoFresh Almond Unsweetened or Original
  • 1 cup all-purpose flour
  • 2 eggs
  • 1 tbsp oil
  • 1/2 tsp salt


  1. Combine all ingredients in a blender with the SoFresh Almond and puree until smooth. Refrigerate batter for ½ hour.
  2. Heat a 6” non-stick skillet over medium-high heat.
  3. Pour approximately 1/4 cup of the batter in the hot pan and swirl the pan so the batter evenly coats the bottom of the pan, pour off any excess back into the batter.
  4. Cook the crêpe about 1 minute on each side until crêpe is set and slightly golden.
  5. Continue to cook crêpe one at a time until the batter is used, brushing the pan with oil or butter if needed.
  6. Fold the crepe in four and serve with fresh fruit and maple syrup.
