Salmon Mornay with Herbylicious Pasta

  • 3 tbsp (45 mL) extra virgin olive oil
  • 2 tbsp (30 mL) unbleached all purpose flour
  • 2 cups (500 mL) SoFresh Almond Unsweetened, warmed
  • 2 tbsp (30 mL) Dijon mustard
  • 1 tbsp (15 mL) finely chopped fresh thyme leaves, or ½ tsp (2 mL) dried thyme leaves
  • ½ cup (125 mL) soft goat cheese, crumbled
  • ¼ cup (60 mL) Parmesan cheese, finely grated
  • ¼ tsp (1 mL) salt
  • ¼ tsp (1 mL) ground black pepper
  • 4 salmon fillets, skin on (about 3 to 4 oz ounces (75 to 125 g) per person)
  • 4 cups (1 L) rigatoni, fusilli, or penne pasta, uncooked
  • 3 tbsp (45 mL) extra virgin olive oil
  • ½ cup (125 mL) fresh parsley, finely chopped
  • ½ cup (125 mL) fresh dill, finely chopped
  • ¼ cup (60 mL) fresh chives, finely chopped
  • ¼ cup (60 mL) fresh basil, finely chopped


  1. In a small saucepan set over medium heat, stir together olive oil and flour. Continue stirring for 3 to 5 minutes, or just until the mixture starts to brown.
  2. Using a whisk, stir warm SoFresh Almond into flour mixture and continue whisking, until sauce begins to thicken, about 7 to 10 minutes. Remove from heat and stir in Dijon mustard, thyme leaves, crumbled goat cheese, grated Parmesan cheese, salt and black pepper. Cover and set aside. Makes 2½ cups (625 mL) sauce.
  3. Preheat oven to 450°F (230°C). Place fish on a large baking pan lined with parchment paper. Sprinkle lightly with salt and pepper. Bake in preheated oven for 15 to 20 minutes, or until the tip of a sharp knife inserted into the thickest part of the fish for 10 seconds is hot to the touch.
  4. Prepare pasta according to package instructions. When pasta is cooked, reserve ¼ cup (60 mL) of cooking liquid and set aside, then drain pasta and return it to the pot. Add reserved cooking liquid and olive oil to the drained pasta and set over medium-high heat. Cook, stirring constantly, until evenly heated through. Remove from heat and stir in finely chopped herbs. Serve individual plates of pasta topped with a piece of salmon and a generous drizzle of warm sauce.
