Yammy Mashed Potatoes

  • 2 pounds of peeled and cubed yams or sweet potatoes
  • 1/2 cup SoFresh Almond Unsweetened
  • 2 tbsp butter or margarine
  • 1/2 tsp salt
  • 1/2 tsp fresh ground pepper
  • Maple Syrup to taste

Instructions

  1. Boil yams in water until soft, 15 – 20 minutes.
  2. Drain water from pot and add all ingredients and mash until smooth.
